Festivities in India are always marked by sweets (mithai), first offered to the Gods as prasad before being shared among people. Deeply rooted in tradition, Indian sweets are largely milk-based, with classics like peda, kheer, rabri, barfi, kalakand, and milk cake, while eastern India developed chhena-based delicacies such as rasgulla, sandesh, rajbhog, and rasmalai. Other regions brought forth iconic creations like mysorepak from roasted gram flour. Traditionally sweetened with jaggery and honey before sugar became common, mithai has been central to Indian culture for millennia. However, with India now one of the world’s highest sugar consumers and facing rising diabetes rates, modern chefs are creating healthier variations with ingredients like oats, dates, figs, and jaggery, ensuring the essence of mithai remains alive while adapting to health needs.

Kaju Katli, often called the “diamond of Indian mithai,” is a beloved sweet made with cashews and sugar. Its name literally means “cashew slice”, and it is especially popular during Diwali, Raksha Bandhan, and weddings as a symbol of prosperity and celebration. Smooth, melt-in-the-mouth, and lightly flavored with cardamom or rose water, kaju katli is simple yet elegant, making it one of the most cherished sweets across India.
Ingredients
- 1 cup cashews
- ½ cup sugar
- ¼ cup water
- 1 tsp ghee (for greasing)
- ½ tsp cardamom powder or a few drops of rose water (optional)
Method
- Grind Cashews – Blend the cashews in a dry grinder until you get a fine powder (don’t over-blend, or it may release oil).
- Prepare Sugar Syrup – In a pan, add sugar and water. Heat until the sugar dissolves and forms a one-string consistency syrup.
- Mix Cashew Powder – Lower the heat and add cashew powder to the syrup. Stir continuously until it thickens into a soft dough.
- Flavor & Rest – Add cardamom or rose water if desired. Turn off the heat and let it cool slightly.
- Roll & Cut – Grease a flat surface with ghee, roll out the dough into a thin sheet, and cut into diamond shapes.
2. Suji ka Halwa

Suji ka Halwa, also known as Rava Sheera in western India, is one of the simplest yet most comforting Indian desserts. Made with semolina, ghee, sugar, and nuts, it is often prepared as prasad during religious ceremonies or festivals like Navratri and Satyanarayan puja. Its warm, rich flavor and quick preparation make it a household favorite for both everyday indulgence and special occasions.
Ingredients
- 1 cup suji (semolina/rava)
- ¾ cup sugar
- 3 tbsp ghee
- 2½ cups water or milk (or a mix of both)
- ½ tsp cardamom powder
- 8–10 cashews & raisins for garnish
Method
Garnish & Serve – Top with fried cashews and raisins. Serve warm.
Roast the Suji – Heat ghee in a pan and roast the suji on low flame until it turns golden and gives a nutty aroma.
Prepare the Liquid – In another pot, boil water (or milk) and add sugar. Stir until sugar dissolves.
Combine – Slowly pour the hot sugar water into the roasted suji while stirring constantly to avoid lumps.
Cook & Flavor – Let it simmer until the mixture thickens and the suji absorbs all the liquid. Add cardamom powder.
3. Thengai Urundai or Coconut Laddoo

Coconut Ladoo, or Thengai Urundai in Tamil, is a simple yet delightful sweet made with coconut and jaggery (or sugar). Often prepared for festivals like Ganesh Chaturthi and Janmashtami, it’s bite-sized, soft, and bursting with natural flavors. The best part? It needs only two main ingredients and comes together in minutes.
Ingredients
- 2 cups fresh grated coconut (or desiccated coconut)
- 1 cup jaggery (grated) or sugar
- 2 tbsp ghee
- ½ tsp cardamom powder
Method
- Heat Jaggery Syrup – In a pan, add jaggery and ¼ cup water. Heat until it melts and forms a slightly sticky syrup.
- Mix in Coconut – Add grated coconut to the syrup and cook on low flame until the mixture thickens.
- Flavor & Bind – Add cardamom powder and a spoon of ghee, then stir well until combined.
- Shape the Ladoos – Grease your palms with ghee, take small portions, and roll them into round ladoos.
4. Payasam

Payasam, also known as Pal Payasam in Tamil Nadu or Paramannam in Andhra Pradesh, is one of the most traditional South Indian sweets. It is often served as prasadam (holy offering) in temples and made during Onam, Pongal, and weddings. Creamy, mildly sweet, and flavored with cardamom, this dish is both festive and comforting.
Ingredients
- ½ cup raw rice (small-grained works best)
- 4 cups full-cream milk
- ½ cup sugar or jaggery
- 2 tbsp ghee
- 1 tsp cardamom powder
- Cashews and raisins for garnish
Method
- Cook Rice – Wash and pressure cook rice until soft.
- Boil Milk – In a heavy-bottom pan, boil milk and simmer until it slightly thickens.
- Mix Rice & Sweetener – Add the cooked rice and sugar (or jaggery). Stir continuously until the mixture turns creamy.
- Flavor & Garnish – Add cardamom powder. Fry cashews and raisins in ghee, then add to the payasam.
5. Besan Laddoo

Besan Ladoo is one of North India’s most loved festive sweets, made by roasting gram flour (besan) in ghee and binding it with sugar. Method
- Roast Besan – Heat ghee in a pan, add besan, and roast on low flame until golden brown and aromatic (about 10–12 minutes).
- Cool Slightly – Allow the mixture to cool a little (it should be warm, not hot).
- Add Sugar & Flavor – Mix in powdered sugar and cardamom powder. Stir well until combined.
- Shape Ladoos – Grease your palms with ghee and roll the mixture into round ladoos. Garnish with nuts.
