I don’t know what I’m holding in my hands. But I do know that my family likes to eat it, so I make it every time so that my parents can exclaim over it and the term can once again slip out of my head.
Minced shrimp, stir in some scallions. Scoop into the pretty translucent wrappers ayi gets at the corner market. Fold them up snugly, place in the steamer. Breathe into the damp bamboo basket, for good luck. Place the lid on, and set the timer.
Xia jiao, you remember when the steam comes up.
